Full course description
How can science, technology and responsible choices shape what we grow, produce and eat? Developed in collaboration between Mälardalen University, Sweden, and Mendel University, Czech Republic, this online course brings together sustainable food sources, technological innovations and nutrition to explore the future of food.
You will explore how food systems connect society, the economy and the environment, and why a promising idea does not always lead to a more sustainable outcome. The course examines food sources ranging from plants and animals to insects, microorganisms and aquatic organisms, considering their nutritional properties, processing requirements, safety and environmental context.
You will also discover developments such as vertical farming, cultivated meat, food printing and artificial intelligence, looking at both their potential and their practical limitations. Alongside these technologies, the course explores important nutrients, how the body digests food and absorbs nutrients, and the possibilities and limitations of personalised nutrition.
No specialist background is required. Learn at your own pace, build your understanding and return whenever it suits you.
